Soil:
Prevalence of active lime and silicon, sown with only specific biological mixtures made of low size legumes and gramineous to prevent naturally the growth of weeds. The soil is fertilized with mixed organic product, coming from the maceration of healing herbs.

Bush-trained, no chemical pesticides are used
Harvest:
By hand, in the second week of August
Vinification:
The grapes are gentle pressed and the slow fermentation takes place at a temperature of 15°C (59°F) for about 20 days. After the maturation in steel tanks the wine is aged for three months in bottle. No sulphites are added and no traces of yeast fermentation remained, these elements are replaced by natural derived substances.
Tasting notes:
The colour is light straw yellow and fruity aromas conjure up slightly scents of Sicilian citrus. On the palate is clean and soft, with fragrant flavour and with a good level of acidity.
Food matching:
Perfect with pasta and fish dishes, grilled and stew vegetables. Excellent for an aperitif.
Serve:
in a medium size tulip wineglass at a temperature of 6-8°C
