Soil: medium clayey
Harvest: by hand, towards the end of August
Vinification: the grapes macerate on the skins for approximately 6 days followed by racking, soft pressing and malolactic fermentation. The wine matures at a controlled temperature in steel vats and concludes its process with a month’s refinement in the bottle.
Organoleptic notes: the color is lively ruby red with purple hues. The strongly fruity aromas release notes of Morello cherry, pleasant and light aromas. On the palate it is harmonious with elegant tannins and medium persistence.
Pairings: goes well with a wide variety of dishes, from both white and red meat, to medium-aged cheeses. Also excellent for appetizers of cured meats and tasty cold cuts.
How to serve it: it expresses its best in a medium-sized glass and served at a temperature of 15°c
