Drying: in an open environment on racks
Vinification: the dried grapes are gently pressed and left to vinify in steel vats at a controlled temperature. A small percentage of raisins is added to the fresh must to release its aromas, sweetness and freshness. Maturation, at a controlled temperature, lasts approximately 8 months and refinement is completed in the bottle for another 6 months.
Organoleptic notes: with a bright amber yellow colour, it releases a sweet harmony on the nose between notes of fresh and ripe apricot, candied orange peel and honey. On the palate it offers freshness and an enveloping sweetness. Long and pleasant persistence.
Pairings: exceptional meditation wine to sip while reading a book, listening to music or smoking a cigar. A romantic wine to be enjoyed in sweet company. Its particular fragrance makes it suitable for pairing with mature cheeses and perfect for finishing a meal with dessert based on ricotta and dried fruit.
How to serve it: it expresses its best in a medium-sized glass and served at a temperature of 15°c
